Mountain Honey is a naturally derived product with its unique properties attributed to the diversity of flora where bees have gathered nectar. Its origins can be traced to flowers like rockrose, hawthorn, thyme, blackberry… or from oak and holm oaks, which in the summer months eliminate excess sap, secreting a viscous substance rich in carbohydrates, known as honeydew, collected by our bees.
Collectively, these factors impart distinctive organoleptic characteristics to mountain honey: its deep dark color, a floral aroma, and a stronger, less sweet taste compared to other types of honey, making it exceptionally pleasing to the palate. It boasts high levels of vitamins B and C, as well as being rich in iron and mineral salts.
Natural oak honey possesses an exceptionally intense amber-dark color and a full, penetrating, malty sweetness that evokes a fascinating woody sensation with ancient origins. Its aroma is distinctly intense and persistent, with slightly aromatic hints of maltiness.
